This morning has been really wonderful.
I woke up early, ran a couple of miles in Battery Park, grabbed an iced coffee on my way to the farmers’ market by Bowling Green and bought 4 peaches — two white, and two yellow.
Unfortunately the last time I had a comparably fantastic morning things didn’t go so well for me. I went to the gym, ate a healthy breakfast, wore a new dress I found on sale in my size, got to work early and was immediately laid off. Condé Nast Portfolio: may she rest in peace.
But I’m confident that this day will not end like that… Crosses fingers, knocks on wood, throws salt over left shoulder.
Anyway, here is the delicious and nutritious smoothie I made this morning!
Ingredients:
1 peach, peeled, pitted and chopped into bite-sized chunks
15 raw almonds
1 cup vanilla soy milk (I used Silk light vanilla)
After your peach is ready to go:
Combine all ingredients in a small bowl (if using an immersion blender) or a blender.
Liquify said ingredients until there are no noticeable chunks.
I washed out my iced coffee cup from earlier, and voila, peach smoothie to go!
This was delicious — filling and very good for you. You could even add some flax seed or wheat germ for more health benefits. Enjoy!
Thanks for posting this recipe! I’ve always liked smoothies in theory, but I hate when I go to the smoothie shop that they pour in so much sugar/splenda/whatever powders. The last time I tried making one it was pretty bland, but I gave your Peach Almond Smoothie a try and it’s great. I landed here via “Forgotten Bookmarks” btw 🙂
