Egg in a Cup

This silly little dish is so simple, yet oh so satisfying.  If you know how to make toast and soft boil an egg you’re in business (and if you don’t, read on – you soon will!).

Step 1.  You’ll need a mug, some butter, 2 pieces of bread and 2 eggs.  Put a small pot of water on to boil.  Place a few tabs of butter in the mug.Step 2. Toast bread.

Step 3. Once the water has come to a boil gently place the 2 eggs in the water for 1 minute.  After the minute is up take the pot of water off the heat and let the eggs rest in the warm water for 5 minutes.  Run the eggs under cold water or place them in ice water as soon as the 5 minutes is up in order to stop the cooking. You’ve just soft boiled eggs – you should have a custardy white and a runny yolk.Step 4. Tear the toast into pieces and place them in the mug with the soft boiled egg and butter.  Mash and mix to combine.  Season a bit with a little salt and pepper and there you you have it – comfort in a cup! (Believe me, it tastes a whole lot better than it looks.)I’m sure almost every Mother in America has her own version of “egg in a cup” and this is my Mom’s.  Making it for me when I was young on school day mornings and even now when I’m back for a visit – nostalgic for those mornings past.  It’s unfussy and just plain good – as most comfort food is.
