I just love being inspired by the farmers market… on Wednesday I found THE most lovely head of bibb lettuce and the most glorious and wretched looking heirloom tomato and absolutely had to make something with them: a delicious AND healthy salad with herb-filled green goddess dressing.
For two generous side servings you will need:
1/2 cup plain greek yogurt (I used nonfat Fage)
1 tbsp mayo
1/3 cup roughly chopped basil leaves
2 chopped scallions, white and green parts
1 clove of garlic, chopped
Juice from half a lemon
1/2 tsp anchovy paste
2/3 tsp salt
1/3 tsp pepper
1 head bibb (also called Boston) lettuce
1 large tomato
Combine all ingredients in a blender, or the bowl of a food processor (if you have a smaller insert bowl for your food processor, use that!). Blend until almost totally pureed, you should be able to see flecks of herbs in there. Remember to scrape down the sides of your food processor periodically to make sure everything is evenly mixed.
Pour the dressing into a container and store in the refrigerator until you are ready to use it.
Slice your bibb lettuce into quarters, and rinse each off. Chop up the tomato into bite-sized chunks. Put two quarters of lettuce and half of the tomatoes onto two plates, then generously dress with the green goddess dressing.
This tangy, fragrant dressing is a perfect addition to any salad, and would also make a great dip! Enjoy!
