Okay, technically Day 8 has come and gone and I should have shared this wonderfully cheesy dip recipe with you all yesterday but I got caught up in the holiday rigamarole and had to save it for today…forgive me? Considering how busy we all keep from Thanksgiving to New Years this is just the sort of recipe you want to have up your sleeve (or in your recipe box) – quick, easy, tasty and crowd pleasing.
What you’ll need…
4 oz. grated sharp cheddar
1/2 cup mayonnaise
4 oz. cream cheese, room temperature
1-2 sliced, jarred pimientos
2 T grated onion
1/2 t Sriracha hot sauce
Dash of Paprika
1/4 t each of S&P
Meet all ingredients in a food processor and puree until smooth.
Taste and adjust the seasoning (and spiciness) to your liking. Serve with crackers, crudite or just grab spoonfuls in between trips to the store, wrapping gifts and sending Christmas cards.
