Chili is one of those dishes that is incredibly easy to throw together. Put a pot on and let the flavors meld and in an hour or so when you come back to it you’ll have a deliciously filling meal. I’ve pretty much been living off this triple batch of chili for about a week now. It’s a little more bean than turkey but I think that makes it all the more hearty and healthy.
What you’ll need:
1 lb. ground turkey
3 onions, diced
4 cloves garlic, minced
2 red bell peppers, cubed into 1” pieces
3 15oz. cans diced fire roasted tomatoes
1 28 oz. can crushed tomatoes
2 15 oz. cans black beans
1 15 oz. can pinto beans
2 15 oz. cans red kidney beans
2 cups frozen corn
1 T 1 t cumin
1 T cinnamon
2 T chili powder
1 1/2 t red pepper flake
Various accouterments such as cheese, cornbread, rice, scallion, cilantro, sour cream… whatever your heart desires.
In a large pot brown the turkey in olive oil with the onions and garlic. Try to break up the pieces of turkey as it browns. Once browned add the peppers. Sauté until soft. At this point add about half of the spices along with a little salt and pepper. Stir to incorporate well. Drain and rinse the beans. Add the tomatoes, beans, corn & the remainder of the spices. Bring to a simmer, cover & cook on low for about an hour. Taste for seasoning.
*Note: While I certainly don’t condone super processed foods someone told me recently just how delicious Fritos are in a bowl of chili…my word. They are. They really are. Might I suggest (or not suggest) trying it out.
